Nourisi ®Xanthan gum acts as substitute for wheat and other cereals used for making bread that is gluten free. It can retain the humidity, increase the softness, improve the taste of baking foods, postpone starch aging and prolong the shelf life of baking foods, it can improve the stability and taste of baking stuffing.
In salad dressing, it performs excellent particle suspension and emulsion stability. It also performs well in salty pasted/liquid sauces and can reduce bleeding of pasted sauces.
Xanthan gum plays a crucial role in ice cream as a thickener and stabilizer. It prevents ice crystal formation, significantly improving texture to be smoother and creamier. This enhances the creamy richness of ice cream, even without added heavy cream, making it ideal for non-dairy alternatives like soy, almond, or coconut milk ice creams.
Xanthan gum powder is extensively used in beverages, serving as a thickener and stabilizer. It prevents ingredient sedimentation, maintains uniform consistency, and improves mouthfeel, resulting in a smoother, richer beverage. In fruit juices and plant-based milk, xanthan gum effectively keeps suspended particles from settling, ensuring uniformity during storage. It also compensates for texture loss in low-calorie or low-sugar drinks, enhancing the drinking experience.
Solubility: Highly soluble in water, forming viscous solutions; insoluble in organic solvents.
Viscosity: Exhibits shear-thinning behavior (thins under stress but thickens at rest).
Stability: Stable over a wide pH range (2–12) and temperatures (up to 120°C).
Synergy: Enhances viscosity when combined with guar gum or locust bean gum
Nourisi ®Xanthan gum is listed as generally permitted food additive (E415) and conforms to definition and specifications from JECFA(FAO/WHO), FDA(21CFR) and European Commission Regulation(EU)No.231/2012.
