Thickening and stabilizing: Xanthan gum is a highly effective thickener and stabilizer, even at low concentrations. It helps prevent ingredients from separating and provides a desired texture and mouthfeel.
High viscosity at low concentration: Its solutions exhibit high viscosity even at very low concentrations, making it an efficient thickener.
Pseudoplastic (shear-thinning): When force is applied (like stirring or shaking), the viscosity of a xanthan gum solution decreases. When the force is removed, the viscosity immediately returns to its high state.
Stability: It is stable over a wide range of temperatures and pH levels (2 to 12), making it useful in many different products and conditions.
Freeze-thaw stability: It is resistant to the effects of freezing and thawing, which helps prevent large ice crystals from forming in frozen products like ice cream.
Water solubility: It is soluble in both cold and hot water and disperses easily without clumping, though it requires sufficient mixing initially to avoid lump formation.
Heat stability: Its viscosity remains relatively unchanged across a wide temperature range, from 10°C to 80°C.
