Solubility: It is readily soluble in both cold and hot water, forming a viscous, clear solution. It is insoluble in organic solvents like ethanol, ether, and acetone.
Hygroscopicity: CMC is highly hydrophilic and has strong moisture absorption properties. Its equilibrium moisture content increases with air humidity. For example, at 25°C and 80% relative humidity, CMC with a degree of substitution (DS) of 0.4 can absorb about 20% moisture, while a DS of 1.2 can absorb over 35% .
pH Stability: CMC solutions are most stable within a pH range of 2–10. Below pH 2, the polymer can precipitate (acid precipitation), and above pH 10, viscosity may slightly decrease.
Thermal Stability: CMC is stable to light and heat. In solution, viscosity decreases as temperature rises. The thermal decomposition temperature typically occurs between 200°C and 250°C, with discoloration starting around 227°C .
Film-Forming: CMC has good film-forming properties. High-viscosity and high-molecular-weight CMC produce films with high strength and flexibility.
Pseudoplastic: Its viscosity decreases during stirring and recovers when standing still. This properties delivers excellent performance for extruding toothpaste and spreading sauces.
Nourisi ®CMC conforms to definition and specifications from JECFA(FAO/WHO), FDA(21CFR) and European Commission Regulation(EU)No.231/2012.
