CMC E466 is used in yogurt, ice cream, milk drinks, and plant-based beverages to provide creamy texture, prevent whey separation, and stabilize protein suspensions. It is particularly effective in acidic environments (e.g., yogurt drinks at pH 4.0–4.5).
In bread, cakes, and fillings, CMC improves water retention, dough handling, and shelf life. It is also used in jellies, puddings, and gummy candies for gelation control.

Thickening and Rheology Control: CMC imparts significant viscosity even at low concentrations (0.5–2.0%). The viscosity grade can be customized from low (e.g., 50 mPa·s) to ultra-high (over 10,000 mPa·s for a 1% solution), offering precise control over flow behavior (pseudoplastic or thixotropic).
Water Retention and Binding: It has excellent water-binding capacity, reducing syneresis and improving moisture retention in food and non-food systems.
Film-Forming Ability: CMC can form a transparent, flexible, and edible film, which is useful as a coating or barrier layer.
Stabilization and Emulsification: It prevents particle settling and oil droplet coalescence, making it an effective stabilizer and emulsifier in suspensions and emulsions.
Dispersion and Solubility: Rapid-dispersing and transparent grades are available for cold-water systems, minimizing lump formation.
pH and Ionic Tolerance: CMC remains stable over a wide pH range (pH 3–11), though extreme acidity or high ionic strength (e.g., high salt content) may reduce viscosity. It is compatible with most non-ionic and anionic ingredients.
