E418 Gellan Gum, internationally coded as E418, is a natural polysaccharide food additive produced through microbial fermentation. It is manufactured by fermenting Sphingomonas elodea bacteria, belonging to the category of microbial exopolysaccharides.
Unlike traditional plant-derived hydrocolloids (such as agar and carrageenan), gellan gum is entirely produced through biotechnology fermentation, unaffected by seasons, climate, or raw material origins. It offers advantages including short production cycles, stable quality, and high purity.
E418 gellan gum molecule consists of basic repeating units composed of glucose, glucuronic acid, and rhamnose. Depending on the acetyl content during fermentation, gellan gum is classified into two main types:
