Used to coat fruits (e.g., apples, citrus), vegetables, and confectionery (e.g., chewing gum, hard candy) to extend shelf life by reducing oxygen uptake, water loss, and microbial growth. It also acts as a glaze for bakery products (bread, pastries) to improve appearance and texture.
Encapsulates flavors, fragrances, vitamins (e.g., vitamin C, B12), probiotics, and food additives to protect them from degradation and control release.
Added to beverages, dairy products, and sauces to improve texture, prevent syneresis, and enhance stability during storage processing.
Used in low-sugar/low-fat foods (e.g., diet snacks, reduced-calorie candies) as a non-digestible bulking agent.

Solubility: Highly soluble in water (up to ~100 g/L at 25°C) and polar solvents (e.g., glycerol, dimethyl sulfoxide), but insoluble in non-polar solvents (ethanol, chloroform, hexane). Solutions remain stable over a wide pH range (3.0–10.0).
Film-Forming Ability: Forms transparent, flexible, and oxygen-barrier films upon drying—its oxygen permeability is among the lowest of all natural polysaccharide films.
Thermal Stability: Thermally stable up to ~280°C (decomposition temperature); films show good mechanical strength (tensile strength ~20–30 MPa) and elongation at break (~5–10%).
Hygroscopicity: Moderately hygroscopic (absorbs ~10–15% moisture at 60% RH), but films can be modified with plasticizers to reduce brittleness.
Nourisi ®Pullulan is listed as generally permitted food additive (E1204) and conforms to definition and specifications from JECFA(FAO/WHO), FDA(21CFR) and European Commission Regulation(EU)No.231/2012. However, we recommend that the user ensure that this product is in compliance with the local regulations in force, particularly in the country where the product is to be consumed.
